Crispy Fried
Noodles
Ingredients:
3 celery sticks
125 g (4 oz) spinach
250 g (0.5 lb) egg noodles salt
1 tablespoon oil
1 clove garlic, sliced
1 piece root ginger, finely chopped
3 spring onions, chopped
125 g (4 oz) lean pork, sliced
125 g (4 oz) boned chicken breast, shredded
1 tablespoon soy sauce
1 tablespoon dry sherry
50 g (2 oz) frozen peeled prawns, thawed
Preparation:
1 Slice the celery sticks diagonally and shred the spinach.
2 Cook the noodles in boiling salted water according to the
packet instructions until just tender, do not overcook. Drain
and rinse with cold water. 3 Heat the oil in a wok or deep
frying pan, add the garlic, ginger and spring onions and fry
for 1 minute. Add the pork and chicken and stir-fry for 3-5
minutes. Add the noodles and remaining ingredients and cook
for 3 minutes.
